In the mid-800 Bortolo Zanin opened an inn, which offered, between the various local food and drinks, even the “white spirit”. Zugliano people developped a passion for the “graspe” so much that Bortolo decided to begin to expand the production of distillates. In the ’40s, with the inn all in all closed, the son Rino continued the expansion activity of the distillery and aging of destillates, leading to fame the Cavallina Bianca brand. In the ’70s, with Fausto Zanin the company expands abroad, in 38 countries. Today the distillery is led by Piero Zanin and his brother-in-law Massimo Fontana, which have enlarged the production to new premises in Zugliano, restoring the old mill acquired by father Fausto. Four generations linked by the same passion, illustrated in the essence of every drop labeled Zanin 1895.

The raw materials used to create these distillates have been carefully selected and distilled using the traditional batch method. Grappa is synonymous with Italianness. The precious pomace distillate that contains mastery and professionality handed down becomes part of that “made in Italy” that in the world represents us and Monte Sabotino Grappa, which the flavor of the years makes unique, represents the excellence of grappa and their Genesis.

The distillate obtained from the pomace of red and white grapes typically belonging to the territory of origin, Veneto. Its delicate flavor leaves a velvety persistence on the palate. The distillation method is handmade: discontinuous, with the cutting of the heads and tails, in steam copper alembic. Aged not less than 6 months in steel containers. Produced in the high Veneto plain: an ideal territory for the cultivation of these grapes. Optimal yields allow obtaining such an authoritative distillate. It should be served at around 12 ° C in an open tulip-corolla glass. Perfect if combined with fish and sushi, with creams based desserts, in ice cream or when added to the spoonful of fruit salad. Description

Genesis depicts “the beginning of history”, the gateway to great aging. The creation of a fresh and pure product that after years of rest will be known in the heterogeneous and complex versions of the older sisters of the Selezione Monte Sabotino line.

Professionalism and craftsmanship have distinguished Zanin in over a hundred years in the distillation, processing and aging of Grappa, Italian excellence and craftsmanship made in Veneto.

History

We like very much to explain the Zanin distillates and the best way to do this is to have them taste in their product and ripening genesis. Genesi is born from the pure distillate, which after a period of maturation in steel, allows to appreciate the freshness of the product, its purity and the velvety softness.

The centenary experience involves with the intoxicating and delicate, almost mellow perfume.

Distillation Method

Controlled temperature fermentation to avoid harmful secondary fermentations. Followed by the discontinuous distillation with the cutting of the heads and tails, in particular copper steam stills, the result of innovation and continuous research.

The distillation takes place very slowly to allow the volatile components responsible for the perfumes to evaporate and consequently condense while keeping intact the precious organoleptic characteristics of the selected vines.

Maturation / Aging

Obtained by distillation from the marc, ie the grape skins after pressing for the production of wine, strictly selected. Subjected to constant controls to monitor organoleptic evolution and aromatic yield, Genesi is prepared for presentation to the public.

How to Serve

It should be served at around 12 ° C in an open tulip-corolla glass. Before tasting, Grappa Genesi Monte Sabotino Selezione must rest a few minutes in the glass: oxygenating, the aromas are enhanced, the nose palate harmony is completed.
