In the mid-800 Bortolo Zanin opened an inn, which offered, between the various local food and drinks, even the “white spirit”. Zugliano people developped a passion for the “graspe” so much that Bortolo decided to begin to expand the production of distillates. In the ’40s, with the inn all in all closed, the son Rino continued the expansion activity of the distillery and aging of destillates, leading to fame the Cavallina Bianca brand. In the ’70s, with Fausto Zanin the company expands abroad, in 38 countries. Today the distillery is led by Piero Zanin and his brother-in-law Massimo Fontana, which have enlarged the production to new premises in Zugliano, restoring the old mill acquired by father Fausto. Four generations linked by the same passion, illustrated in the essence of every drop labeled Zanin 1895.

The raw materials used to create these distillates have been carefully selected and distilled using the traditional batch method. Grappa is synonymous with Italianness. The precious pomace distillate that contains mastery and professionality handed down becomes part of that “Made in Italy” that in the world represents us and Monte Sabotino Grappa, which the flavor of the years makes unique, represents the excellence of grappa and their Genesis.

The distillate obtained from the pomace of red and white grapes typically belonging to the territory of origin, Veneto. Its delicate flavor leaves a velvety persistence on the palate. The distillation method is handmade: discontinuous, with the cutting of the heads and tails, in steam copper alembic. Aged not less than 6 months in steel containers. Produced in the high Veneto plain: an ideal territory for the cultivation of these grapes. Optimal yields allow obtaining such an authoritative distillate. It should be served at around 12 ° C in an open tulip-corolla glass. Perfect if combined with fish and sushi, with creams based desserts, in ice cream or when added to the spoonful of fruit salad. History

We like very much to explain the Zanin distillates and the best way to do this is to let them taste in their product development and maturation. Grappa Vintage Monte Sabotino is born from pure distillate that after a maturation in wood strictly oak where with the skill of skilled hands and hands it passes from cask into cask. The wise experience in the art of aging can be immediately understood in the tasting where the inebriating perfume is very delicate, almost persuasive and immediately suggests the softness. The mastery of combining science and alchemy distilling has always made, and it is our primary commitment, the Zanin distillates pleasantly harmonious and familiar. The personal selection of raw materials and the complete monitoring of the distillation process allow us the qualitative results necessary to obtain national and international prizes and awards of our products, among which Genesi becomes part of it.

Distillation Method

Controlled temperature fermentation to avoid harmful secondary fermentations. Followed by the discontinuous distillation with the cutting of the heads and tails, in particular copper steam stills, the result of innovation and continuous research.

The distillation takes place very slowly to allow the volatile components responsible for the perfumes to evaporate and consequently condense while keeping intact the precious organoleptic characteristics of the selected vines.

Maturation / Aging

Obtained by distillation of carefully selected pomace, ie grape skins resulting from the pressing for the production of wine.
