The Sterpo Agricultural Company, in the homonymous village of Sterpo, in Friuli, for over 50 years of activity, today transforms about 15.000 quintals of trout per year – divided between rainbow trout, brown trout and char – in fresh fillets, hamburgers and other delicacies in various specialties.

The village is rich in ancient medieval tradition and is immersed in the great park of the Stella river. Whole trout with natural flavors is a hot smoked eviscerated trout, to be tasted with oil and lemon juice.

Italian salmon trout fillet 99%, salt, natural flavors.

Description

A true specialty, free of saturated fats and cholesterol. Made with slow cooking process and hot smoking according to ancient recipes that are handed down over time.

Orodotto stored inside a vacuum bag wrapped in an elegant cardboard box.

Processing

The uniqueness of the product is given by the cold smoking process, carried out carefully using fine woods and aromatic herbs.

Usage Advice

Ideal to season with a little oil and lemon juice, all accompanied with a glass of dry white wine at a temperature of 10/12 degrees.

Curiosities

The salmon trout is rich in many vitamins including A, B1, B2, B6, B12, D, H and PP and large amounts of fluorine, iodine and zinc that stimulate the metabolism. For this reason it is a recommended fish for those who follow a controlled diet or for those who simply decided to go on a diet.
